2-Tuesday

Okay, these are pretty boring.
1. It rained a little yesterday. The drought has been bad here. I can see the bottom of the lake at some of the docks.

2. I am having a hard time coming up with a variety of dinners to cook for the family.

Okay, there you go. I hope you found that interesting!

I've got a quick and easy recipe for Porcupines. All you need is a box of beef ricearoni and groundbeef.

and here is an easy but good recipe- Whiskey Chicken (don't let the name scare you)

4 chicken breast(or how ever many you want)
1 can cream of chicken soup
1 can cream of mushroom soup
1/3 cup of white cooking wine

dump it all in a crock pot and cook it on low all day or on high for half the day and wha la! makes a tender chicken breast and a tasty gravy that goes great over rice or mash potatoes.

wendy- i can never figure out dinners either. coming up with something healthy and not boring is quite a challenge. Lisa posted a chili recipe a while back that is quite tasty...

sorry to leave you hanging here's the Porcupine recipe

1. Combine 1lb hamburger meat with 1 box beef
ricearoni and hand mix
2. Roll into 1inch balls
3. Brown porcupines in pan with oil
4. Add 1cup+ water and ricearoni seasoning mix to pan
5. Simmer for 20-30 minutes until done
6. Remove Porcupines and set aside
7. Mix flour and water and add to sauce to make gravy
8. Goes well with mashed potatoes
9. Serve with a smile

Note: all measurements are rough estimates so eyeball it.

Frito salad:

Warm chili. I use can a can of Campbell's roadhouse chili. You could be creative and do your own or whatever.

Put fritos on plate. Pour chili over it. Then, I put shredded colby and monterey jack cheese on top.

That is they way the kids like it. You can get even more fancy and put what ever you want on it. Like: sour cream, avacodo,tomatoes.

I learned this from Allie. Steve's volunteer intern. After every wed. youth meeting, she will bring dinner for all the other interns and steve.

Chicken DiVan
It is soo awesome and easy!

Ingredients:
• Pack of 4 Boneless Skinless chicken breasts
• 2 bunches of broccoli/ or the equivalent of frozen broccoli
• ¾ cup of Mayo
• 2 cans Cream of Chicken Soup
• Curry Powder (to taste inthe Sauce)
• Lemon Juice (to taste in the sauce)
• Egg Noodles
• Big Pack of shredded cheddar cheese

Pre-heat oven to 350
Steam/thaw your broccoli
Boil chicken
Boil Your Egg Noodles Last

Sauce- Mix cream of chicken soup, mayo, lemon juice, and curry powder
13x9 dish-
Pull chicken apart in to bite size pieces (not too big or too small) and spread all the pieces on the bottom of the dish
Place the broccoli in a layer on top of the chicken
Then spoon all the sauce on top of the chicken and broccoli
Cover with the entire pack of shreaded cheddar cheese and place in the oven for 25 minutes

serve the Chicken DiVan over the egg noodles

I use something I'd like to think is a little above average for my bachelor-ness: add a can of Cambell's "Cream of Mushroom" to just about anything (meat, noodles, pizza, you know) and it makes it awesome.

Ok, maybe not the pizza... it stands on its own.
